Roy Lee Lindsey, CEO
After living his entire life in Oklahoma and serving as Executive Director of Oklahoma Pork Council for 22 years, Roy Lee found his way to NC to serve as the CEO in 2021. He grew up on a small farm and has continued to be integrally involved in agriculture. The people have been the best part of it all. He once had a board president say that our farmers “are good people out here trying to feed the world & that used to be a noble profession.” He was right then, & he’s still right today. Beyond agriculture, Roy Lee loves to play golf and darts, cook, and enjoys a glass of good wine or bourbon.

Bailee Arnold, Communications & Outreach Specialist
Bailee is a wife, mom, former farmer (is there truly such a thing), and avid fossil hunter (specifically, she loves hunting for shark teeth). Before coming to NC Pork, she managed a 4,000 head sow farm at Maxwell Foods and later, worked for NCSU with the Swine Extension Research Specialists. Her love of pigs and people reached new levels as our Outreach Specialist. For her, educating people about the pork industry is one of the most rewarding parts of the job.

Caitlyn Randall, Digital Media Specialist
For Caitlyn, her job gets to combine some of her favorite things—cooking and photography. She believes that everyone’s story deserves to be told, especially of those who put food on our plates. When she doesn’t have a camera in her hand or isn’t cooking pork for a reel, Caitlyn collects vintage postcards from Carolina and Kure Beaches, Fort Fisher, and Wilmington. The collection started with her late grandfather, whom she named her son after. He also introduced her to her love of photography.

Todd Ellis, Accountant
Todd has over 30 years of experience in various industries including restaurants, music research, at-home healthcare, and a prison for female inmates specifically for substance abuse rehabilitation as a CPA, and now the pork industry. Hailing from Texas, he followed a girl to NC in 1996, but ended up marrying someone else who happened to be a Tarboro native. Todd loves sporting events, kayak fishing on the NC coast, and Pokemon. His random flex is he was a mini golf champion as a youth.

Katherine Dils, Operations Coordinator
A Raleigh native, Katherine holds degrees in Art History and a Masters in Higher Education Administration. She started her career at NC Farm Bureau Federation but is now loving her work in the pork industry, saying the passion of pig people is contagious. You can find Katherine golfing or spending time with her golden retriever, Elsie.

The board is composed of 18 district directors elected by the members in three districts.* In addition, allied industry and meat processors are represented on the board by one director each. The officers and any individual serving in a national capacity serve as directors at large.

*The membership voted at the 2023 annual meeting to change the district structure and the allocation of board members among districts. Beginning with the elections for the 2024 Board of Directors, the state will be divided into three (3) districts. District 2 and 3 have been combined to make District 2. District 4 will change to District 3. All districts will be guaranteed three (3) elected directors with the remainder of the directors allocated in proportion to the hog population in each district as determined every five years by the USDA Census of Agriculture.
**The state officers and any individual from North Carolina serving in a national pork industry position serve as directors at large. Representatives of N.C. A&T State University, N.C. State University, N.C. State University College of Veterinary Medicine, and the N.C. Department of Agriculture and Consumer Services serve as non-voting members of the board.
