Crispy Herb-Crusted Pork Chops

Preheat the oven to 400°F. Pat the pork chops dry and season both sides with salt and black pepper.
In a shallow bowl, combine the breadcrumbs, Parmesan cheese, parsley, thyme, and garlic powder.
In another bowl, whisk the eggs until well combined.
Dip each pork chop into the beaten eggs, then press firmly into the herb and breadcrumb mixture until evenly coated.
Heat the olive oil and butter in a large oven-safe skillet over medium-high heat.
Add the breaded pork chops and cook for 2–3 minutes on each side until the coating is golden and crispy.
Transfer the skillet to the preheated oven and bake for about 10–15 minutes, or until the pork reaches an internal temperature of 145°F.
Remove the pork chops from the oven and let them rest for 3–5 minutes before serving.
Serve warm with roasted vegetables, mashed potatoes, or a fresh green salad.
